This week, we’re going behind the scenes at The Brook Tavern while Chef Jon Pang whips up a simple roasted garlic hummus! Just a few basic ingredients that you may already have in your pantry and you have a summer appie that you’re ready to serve to your backyard guests!
RECIPE:
4 cups (about 2-15 oz. cans) of drained and rinsed cannellini or garbanzo beans
2 oz. lemon juice
10-12 cloves of roasted garlic*
4 oz. olive oil or garlic olive oil
Salt and Pepper to taste
*Cloves can be browned in saucepan in olive oil or in an oven.
Combine beans, lemon juice, garlic, and some salt and pepper to blender. Blend, and then add small amounts of oil until you get the desired consistency. Salt and pepper to taste.
I’ve ordered this hummus a hundred times and NEVER would have guessed that there was no tahini! Chef Jon often adds roasted red peppers or roasted beets for an interesting variation.
Serve alongside pita bread, chips, veggies, or spread on your favorite bread or sandwich! YUM!
